TANNIN
WHAT IS TANNIN? Tannins are naturally
occurring plant polyphenols. Tannins are common to all plant foods.
WHAT AFFECT DOES TANNIN
HAVE ON OUR BODIES? Tannins bind and
precipitate proteins (which is why tannin is used to tan leather). They can
have a large influence on the nutritive value of many foods eaten by humans. Consuming high amounts of tannin can
