Rooibos
Quick Vegetable Soup
| 1/8 cup olive oil |
6 chicken stock cubes, dissolved in
6 cups of hot Rooibos Tea |
| 3 onions, finely chopped |
3 carrots, chopped |
| 2 cloves of garlic, crushed |
4 potatoes, diced |
| 2 cups broccoli, broken into florets |
1 lb of bacon, diced |
| Coarsely ground black pepper and salt to
taste |
1 small can tomato paste |
| ¼ cup Tbsp fresh parsley, chopped |
2 cups cabbage, sliced (optional) |
| 2 1/2 cups green beans, cut into 1” pieces |

Sauté garlic & onions in heated oil in a large saucepan until tender.
- Add bacon & fry until done, but not brown.
- Add the remaining vegetables and stir-fry slightly.
- Add chicken stock and bring to boil.
- Reduce heat and simmer until vegetables are tender.
- Flavor with salt, pepper and nutmeg.
- Sprinkle with parsley & serve. (Serves 8-10)
