Rooibos
Goulash Soup
| 1/8 cup olive oil |
5 chicken stock cubes, dissolved in
5 cups of hot Rooibos Tea |
| 3 onions, sliced |
¼ cup flour |
| 2 cloves of garlic, crushed |
1 1/4 cups sour cream |
| 1 lb stew meat, cut into bite size bits |
1/8 cup Tbsp sugar |
| Coarsely ground black pepper and salt to
taste |
1 small can tomato paste |
| ¼ cup Tbsp fresh parsley, chopped |
1 Tsp paprika |
| 1 Tbsp cumin |

- Sauté onions & garlic in heated
oil in a large saucepan until tender.

Flavor cubes of meat lightly with salt &
pepper and brown in oil.

Add paprika and cumin and stir fry for 1
minute.

Add tomato paste and chicken stock.

Reduce heat and simmer until meat is tender.

Mix flour with a little water to form a
paste. Add to the soup and heat.

Stir constantly until mixture boils & thickens slightly.

Add sour cream and sugar, flavor with
salt & pepper, & heat.
- Garnish with parsley & serve.(Serves 8)
